ingredients: The bowl

1 Cup cooked sweet potatoes

1 Cup Wild rice

1/4 red onion chopped

3 Cups of Kale

1 Bell pepper or cherry tomatoes – pick your player

1 carrot shredded

1/2 Cup Parsley chopped

Roasted walnuts and sunflowers seeds

Opt. Add Feta cheese / apples

Ingredients: The Dressing

1/4 Cup walnuts

1 clove of garlic

1 TBSP honey

3 TBSP ACV

4 TBSP EVOO

Salt & Pepper

The Method:

Roast your sweet potatoes @ 400 for 20 minutes or until soft. Season with your favorite seasonings. I like salt, pepper, paprika, onion powder, garlic powder.

While your Sweet potatoes are roasting, cook your wild rice according to package instructions.

As everything is cooking prepare your dressing.

Chop all your veggies as stated above or to your liking.

Massage Kale with olive oil and lemon.

Toss in dressing, add an extra squeeze of lemon.

Eat and Enjoy
