In a food processor blend the coconut shreds and dates together.
Place a sheet of parchment paper on a plate and begin to ball up the coconut and date mixture. Use your palms to help flatten them and lay them out. You will get messy.
Refrigerate for 2 hours to harden.
After 2 hours take out the cookies and melt the chocolate. Dip one end in to cover the entire bottom and then drizzle a little on the other end.
