Blueberry Salmon Bake

ingredients: The Salmon

3-4 Salmon Filets

1 Cup of frozen or fresh blueberries

1/4 Cup fresh basil chopped

1/4 Cup Olive Oil

2 Garlic Cloves minced

Salt / peppers to taste

Juice of half  lemon

3 TBSP balsamic

ingredients: The Brussel Sprouts

2 Cups of Brussel Sprouts Quartered

Sprinkle of salt / pepper

3 TBSP Honey

3 TBSP balsamic

The Method:

Preheat oven or air fryer to 400 degrees. Clean your salmon and place on a lined sheet pan or rack.

Clean and chop your brussel sprouts. Drizzle with olive oil and a sprinkle of salt and pepper. Place them on the lined baking sheet or in the airfryer.

In a bowl place your blueberries and begin to gentle mash them. Once mashed add the olive oil, basil, garlic, salt / pepper, and balsamic vinegar.

Drizzle some olive oil over you salmon and then spread the blueberry balsamic glaze over the salmon. Squeeze your half of lemon over the salmon.

Bake the brussel sprouts and salmon for 15 minutes or until fish is completely cooked.

Once the fish is cooked remove from the pan and place on a plate.

Remove the brussel sprouts and put them in a bowl. Toss them with the honey and balsamic vinegar. Place the plate with your fish.
