Kale, Avo, Black Bean Bowl

ingredients: The Salad

2 Cups of Brown rice

3 Cups of Kale stems removed

½ a jalapeno

½ tsp of cumin

4-5 avocados

½ cup salsa verde

½ cup cilantro

2 TBSP lime juice

2 can of black beans

¼ chili powder/ cayenne powder

Garlic

⅓ red onion

The Method:

Cook rice according to package instruction.

While rice is cooking saute your garlic and onions on medium heat for few minutes then add beans and spices. Let that simmer.

Blend avocado, salsa verde, cilantro, and lime juice.

In a separate bowl whisk lime juice, olive oil, jalapeno, cumin, salt, and kale.

In a bowl begin to layer starting with the kale mixture, rice, beans, and sauce. Eat and enjoy!

For meal prep: Put your (1/2 C) rice, (Handful ) kale, and (1/4 C) beans into one container and the sauce into a separate container. Heat the rice, kale, and beans and pour dressing on top.
