1/2 Cucumber, diced
1.2 C. Tomatoes sliced
1/4 C. red onion, diced
Handful of fresh parsley
1/2 Mango, Chopped
1/4 – 1/2 C. Lentils
2 TBSP olive oil
2 TBSP of water
3 TBSP Tahini
1 Garlic clove
2 TBSP Lemon Juice
2 TBSP of Rice Vinegar
1 tsp Agave
salt and pepper to taste
Start by cooking your lentils according to package instructions
Dice cucumbers, tomatoes, red onion, mango, and parsley.
Make the dressing by simply mixing all ingredients together in a small bowl
Assemble your salad and mix in the dressing
