Olive Oil
1 shallot diced
2 cups of spinach
40z goat cheese
1/4 C sundried tomatoes
2 salmon filets
Cauilflower
milk
garlic powder
salt / pepper

Impress everyone with this simple but delicious fish recipe. Soft filets, creamy goat cheese on a bed of cauli-mash.
Add Olive Oil to a pan and let it heat. Once heated add your diced shallot and 2 cups of spinach. Cook until whilted.
In a separate bowl mix together the goat cheese, shallot and spinach mixture, and the sundried tomatoes.
Next add some oil to a baking pan and place your fish in it. Create a slice down the middle of the fish and stuff it with the goat cheese mixture. Use whatever is left to cover the top.
Bake for 425 for 20-25 minutes.
Cauliflower Mash: Roughly chop your cauilflower and add it to your blender with 1/4 C of milk, salt, pepper, garlic powder and onion powder. Begin to blend until smooth. Continue to add milk and spices until your liking.
Asparagus: On a baking sheet spread out your asparagus and drizzle with olive oil and salt and pepper. Place in the oven and cook for 15 – 20 minutes.
Prepare your plate: Pour your cauli-mash in the middle of the plate and place your salmon on top of the cauli-mash with your asparagus on the side and enjoy!
